A little prescriptive for the umms, from your actor-has-been friend: when you feel an um coming on, pause and breathe (which means saying nothing, and that may be difficult :-).

Your mouth needs to catch up to your mind in most cases, and umm acts as a bridge or filler while you think. Honestly, it um doesn't take um long to break. Three days of conscious attention and you'll knock it.
