Recipe: Lemon Rice
Ingredients:
- 1 mug rice (basmati or regular)
- 2 Tbs lemon juice (more if you like)
- 1 tsp salt (more if you like)
- 1/2 tsp Turmeric powder
- 2-3 dry red chillies (or 1/2 Jalapeno or 2 Thai peppers)
- 1/2 Tbs butter
- 3 Tbs olive oil
- 1 tsp urad dhal
- 1 tsp channa dhal
- 1/4 cup cashew nuts (optional)
- 1/4 tsp mustard seeds
- Pinch of asofetida
Preparation:
- Cook rice, adding 1 Tbs olive oil.
- In a pan, add remaining oil and butter.
- When hot, reduce heat to medium high. Add mustard seeds and/or red chillies. (If you do not have red chillies, add other
chillies after the dhal turns red). - When mustard seeds begins to pop, add dhals and/or nuts.
- When dhal/nuts start to turn red, add turmeric powder and asofetida and mix. Reduce heat to medium low.
- Add cooked rice and salt.
- Add lemon juice.
- Mix well. Taste and add more of salt or lemon juice as needed.
- (You can also add chopped cilantro leaves in the end and mix )
