Recipe: Lemon Rice

Ingredients:

  • 1 mug rice (basmati or regular)
  • 2 Tbs lemon juice (more if you like)
  • 1  tsp salt (more if you like)
  • 1/2 tsp Turmeric powder
  • 2-3 dry red chillies (or 1/2 Jalapeno or 2 Thai peppers)
  • 1/2 Tbs butter
  • 3 Tbs olive oil
  • 1 tsp urad dhal
  • 1 tsp channa dhal
  • 1/4 cup cashew nuts (optional)
  • 1/4 tsp mustard seeds
  • Pinch of asofetida

Preparation:

  1. Cook rice, adding 1 Tbs olive oil.
  2. In a pan, add remaining oil and butter.  
  3. When hot, reduce heat to medium high. Add mustard seeds and/or red chillies. (If you do not have red chillies, add other
    chillies after the dhal turns red).
  4. When mustard seeds begins to pop, add dhals and/or nuts.
  5. When dhal/nuts start to turn red, add turmeric powder and asofetida and mix. Reduce heat to medium low.
  6. Add cooked rice and salt.
  7. Add lemon juice.
  8. Mix well. Taste and add more of salt or lemon juice as needed.
  9. (You can also add chopped cilantro leaves in the end and mix )
